The entire tequila making process takes place at Hacienda Patrón, where only Patrón products are made.
The agave matures gradually, approximately every eight years. That's why our expert jimadores take care to seek out and harvest only the blue Tequilana Weber agave that has the ideal sugar content. The jimadores use a sharp tool called a "coa" to remove the leaves to reveal the heart of the plant: the piña.
After the pineapples are cut by hand, they are baked in small brick ovens to ensure even cooking. They are then crushed with a volcanic stone tahona wheel, which measures two tons, and a cylinder mill.
