Elena de Mestres is a cava with its own name and personality. It is a rosé made according to the Mestres method, that is to say, faithful to the traditional aging method. Three varieties are used for its creation, which are somewhat atypical for the wines of this D.O.: Trepat, Monastrell and Garnacha, almost in equal parts. The result is a cava that combines pleasant notes of red fruit with light smoked notes. Mestres points out that it is "the only rosé cava with barrel aging".
