The white tuna fillet. It is hand-cut from the most select slices and fillets of the upper part of the tuna, close to the head and known as the "cogote", and we offer it as a product of special juiciness, filleted and packed by hand.
In order to offer an incomparable flavor, we only use fresh tuna from the Cantabrian Sea during the summer season.
