In the north of Burgundy, not far from Auxerre, the Chablis appellation extends for about fifteen kilometers around the village of the same name.
It was the monks of the Cistercian abbey of Pontigny who were the first to initiate vine cultivation in the region.
The vines of our domain (69 hectares divided into 34 plots) are planted on fairly gentle slopes (between 5 and 20%) where they benefit from different exposures. Thus, the grapes come from a mosaic of several terroirs, which confers a charming complexity to the wine because the characteristics of each terroir are preserved when vinified separately.

TASTING NOTES
The nose presents elegant complexity and combines intense aromas of candied lemon with subtle hints of white flowers. The structure is clean, chiseled and lively with a mineral finish with saline and iodized nuances.
Food/Wine Pairing: Try this wine as an aperitif or with seafood such as oysters, shrimp or crab.
