100% Palomino
Dry wine resulting from a double ageing process. The biological one, under flor, where the wine remains in the criaderas for six years acquiring sharp notes and accentuating its dry palate. Once the flor weakens after the fortification to 17º of alcohol, the wine undergoes oxidative ageing for about 12 years, where it concentrates and acquires the nuances typical of oxidative ageing. A delicate and smooth amontillado, ideal for pairing with smoked dishes.
