El Sermón comes from a vineyard planted in 1972 in a 3x3 planting pattern, harvested by hand, with gravelly soil and pebbles, at an altitude of 740 metres. Harvested by hand, it undergoes spontaneous fermentation and spends an average of 5 months on its lees before being bottled in stainless steel tanks and aged for one month in the bottle before being released onto the market.

TASTING NOTES
View:
Probably a pale yellow colour with greenish reflections, clean and bright, typical of a well-expressed Verdejo.
Nose:
Fresh, herbaceous and varietal aromas: fennel leaves, freshly cut grass, white fruit (apple, pear), perhaps a hint of peach, white flowers and a certain minerality given the pebble soil.
Boca:
A wine with good acidity, fresh but full-bodied thanks to the lees and the old vines. Richer texture than a standard young white wine. Possibly a slightly bitter-herbaceous finish, a common characteristic of the best Verdejos.
