It is a tradition that the sale of Hospices de Beaune wines begins with the auction of this beautiful Cuvée. It is named after the nuns who cared for the sick since the foundation of the Hospices in 1443, some of whom even made important bequests to the institution. Originally from Saint-Omer in northern France, the Sisters had continued their formation at the Hospice of Valenciennes, located on the current French-Belgian border.
Climate and plots:
This cuvée is composed of Bressandes, Teurons and Mignottes; climates as religiously chosen as the name of the cuvée, in homage to the nuns of the same name who cared for the sick since the foundation of the Hospices de Beaune in 1443. If the hillside-high Bressandes, with light, loamy soil, bring finesse, it is undoubtedly with the rockier marge Teurons that the mid-mouth is dense and saline. The Clos de la Mignotte with its very old vines supports everything with a full-bodied and tannic character. It is a wine that combines suppleness and robustness, a beautiful tribute to the Community of Sisters.
Vinification: once vinified, the wines are aged between 18 and 24 months in new French oak barrels with a low toast (provided by Hospices de Beaune), in the Prosper Maufoux cellar.
