Manzanilla ÁS de Mirabrás Sumatorio is a young, static crianza wine, aged on the base of ÁS de Mirabrás 2019. The veil has done a light job, providing aromatic complexity and sharpness in the mouth, but without reaching the standards of a biological crianza and soleras. It is a Manzanilla with the soul of a white wine.
It comes from separately aged Manzanilla butts. Each one developed an independent biological ageing process, until now, when we have decided to launch it to the world by combining part of them.
