Nose
It offers clean and intense aromas of red and black fruits, with spicy nuances provided by the French oak wood and a very marked licorice.
Palate
In thes phase it is ample, fresh, balanced, silky but with a lot of structure and power. A wine with sweet tannins and a long finish full of aromas and flavors.
Food pairing
Ideal with grilled Iberian sirloin steak with confit sauce, ceps and gorgonzola croquettes or cod confit.

VINEYARD AND WINEMAKING
Cold pre-fermentation maceration for 3 days below 12 ºC. Sowing of selected autochthonous yeasts. Fermentation in stainless steel tanks at controlled temperature, with pumping over and phenolic control of the must-wine maceration. Spontaneous malolactic fermentation at low temperature and periodic stirring of the lees in the tank.
The wine rests for 12 months in 300-liter French oak barrels.
