This wine is made using Malaga's finest grapes, Moscatel and Pedro Ximénez, from vineyards located in the Axarquía region and the mountains of Malaga.
This wine is produced in Moclinejo by the Dimobe winery and undergoes oxidative aging for an average of five years.
To make this wine, the musts from the two grapes are first partially fermented separately, then fortified with wine alcohol to stop fermentation, leaving residual sugar and resulting in a semi-sweet wine.
Pajarete wine is a good wine to enjoy both as an aperitif and as a digestif.
