Trasnocho is inspired by the ancient — now extinct — tradition of trasnocho wines from Rioja. It results from a unique wine extraction system developed in-house, using a PVC membrane filled with water to gently press the grape skins, releasing up to 70% of the wine. The result is a red wine with a pronounced fruity expression at the perfect stage of ripeness — round, flavorful, and with excellent ageing potential.
VINIFICATION
Pre-fermentation cold maceration in temperature-controlled chambers specially designed for this purpose, lasting 24 hours (between 4–6 °C). Manual grape selection on sorting tables, separating shoulders and tips. This wine is made exclusively from destemmed grape shoulders. Fermentation takes place in small stainless steel tanks. The wine is extracted using an innovative system with a water-filled membrane bag, avoiding oxidation or friction — a method developed by the winery itself.
Ageing: 20 months in new 225-liter French oak barrels.

TASTING NOTES
Appearance:
Deep cherry red with a ruby rim.
Nose:
Complex and layered, with notes of blueberries, blackberries, rosemary, lavender, herbal infusions, shoe polish, cedar, underbrush, spices, cocoa powder, and delicate pastry hints.
Palate:
Powerful and broad, with great structure and volume. Flavors of ripe fresh fruit, marked minerality, spices, graphite, sandalwood, thyme, and bay leaf. All these elements combine in a long and persistent finish.
