These vineyards, which total 17 hectares, have poor clay-limestone soils and are cultivated according to sustainable agriculture methods, respecting the land as much as possible.
The grapes are harvested by hand and for the production of Valenciso Reserva a cement tank is used where the wine undergoes spontaneous fermentation.
The aging process lasts 19 months, during which the wine rests mostly in French oak barrels and a small part in Caucasian oak barrels.
Once the aging process is completed, the wine rests for 14 months in cement tanks to stabilize naturally.
