Amancio de Sierra Cantabria is a wine made with specially selected grapes from the "La Veguilla" estate, a small, very low-yield vineyard located on clay-limestone soils full of pebbles.
The vines, with an average age of 35-40 years, are cultivated following the principles of biodynamic viticulture.
In the winery, the grapes are destemmed by hand, berry by berry. The wine undergoes a cold pre-fermentation process, followed by fermentation in oak vats with regular foot treading twice a day.
The wine then rests in new French oak barrels where it undergoes malolactic fermentation and ages for 24 months, refining and developing its aromas.
