Amontillado Príncipe de Barbadillo 37,5cl

PRINCIPE is an amontillado wine elaborated by Bodegas Barbadillo in the D.O. Jerez - Xérès - Sherry.

Amontillados are one of the most interesting wines within the Jerez wines. They are first aged as manzanilla with biological ageing under the veil of flor for 8 years and then undergo oxidative ageing for a further 7 years.

A total of 15 years of ageing which gives the wine extraordinary nuances from both ageing processes.

TASTING NOTES

Beautiful amber colour, a typical characteristic of Amontillados. Clean and bright.

Intense nose, elegant and seductive. Saline, hazelnut and toasted notes.

On the palate, good balance and structure, long aftertaste. We can appreciate the typical dryness of amontillados which reinforces its complexity. Good aftertaste.

FOOD PAIRING

Ideal with ham, dried fruits and old cheeses. Its peculiar flavour is the ideal complement to accompany fruit salads and melon with ham. If you prefer a surprising and traditional combination with the cuisine of the South, try it with fish such as dogfish, hake or fillets of rosada stewed with saffron, bay leaves and peas or clam stews. It is also a good restorative with hot soups.
