The grapes are harvested by hand, taking into account the optimum moment of ripeness of the grapes and selecting the best specimens in the field.
Once the harvest arrives at the winery, the best clusters and grapes are selected on the table and then pressed.
The must obtained is transferred to oak vats, which previously contained several wines, where it ferments with its native yeasts.
The resulting wine is transferred to French oak barrels, where it is aged for 22 months, during which time the wine is racked twice a year.
After aging, Pingus is clarified by adding egg whites and finally bottled for marketing.
