L'Ermita 2017 is a red wine produced by Bodega Álvaro Palacios under the Priorat Denomination of Origin. It is crafted from Garnacha and Cabernet Sauvignon grapes, sourced from old, low-yield vineyards, and aged in new French oak barrels.
L'Ermita is one of the great enological treasures of Spain, with which Álvaro Palacios has achieved top-tier recognition.
PRODUCTION
The grapes are fully destemmed and gently crushed. Alcoholic fermentation takes place in small wooden vats with regular punch-downs. The wine undergoes maceration for 45 days. Spontaneous malolactic fermentation occurs in barrels, followed by a minimum aging period of 18 months in new French oak barrels.
TASTING NOTES
Appearance: A dark red wine, nearly black, with pronounced violet edges.
Nose: High intensity of fruit on the nose, very complex, with hints of violets and delicate spices.
Palate: Dense with a rich texture yet smooth in flavor. Well-balanced acidity and freshness.
PAIRING: Perfect with meat stews, game birds, red meats, and aged cheeses.
