The harvest is carried out manually, ensuring the grapes are picked at their optimal ripeness and selecting the best specimens directly in the vineyard.
Once the harvest reaches the winery, the grape clusters are destemmed and gently pressed.
The must ferments in small wooden vats, where it rests for 45 days, undergoing regular punch-downs.
After fermentation, the wine is transferred to French oak barrels, where malolactic fermentation takes place, followed by 14 months of aging.
TASTING NOTES
Appearance: L'Ermita displays a deep ripe cherry red color, exceptionally clean and bright.
Nose: Highly expressive, dominated by fresh ripe red and black fruits, accompanied by notes of spices, balsamic hints, wildflowers, and touches of noble woods (a nod to its extended aging in oak barrels).
Palate: Smooth and pleasant on the palate, with a delightful texture. Complex and flavorful, featuring vibrant notes of fresh ripe fruit complemented by subtle hints of sweet spices (vanilla, cinnamon) and a slight touch of acidity.
AGING POTENTIAL: This wine has remarkable aging potential, perfect to enjoy now or within the next 20 years (provided it is stored in optimal conditions).
PAIRING: L'Ermita pairs exceptionally well with a wide range of main dishes, including roasted or grilled red meats, game, and roasts (such as suckling lamb and piglet), as well as stews and traditional hearty soups.
SERVING: It is recommended to serve at temperatures between 15°C and 17°C for optimal enjoyment.
