Miguelon 2016
Our tribute to Miguelón and Burgos comes with this red wine. It is made using the carbonic maceration method (fermentation takes place inside the grapes). We picked the grapes by hand, with very healthy clusters, in boxes of about 8 kg (to avoid crushing and breakage). Once the alcoholic fermentation was finished, we pressed the grapes and continued the process. In another tank, it underwent malolactic fermentation slowly and growing with the work on its own lees. Finally, in June we bottled it.
In each bottle there are almost two kilograms of Tempranillo grapes, from vineyards of around 50 years old planted in deep soils, with subsoils formed by soft rocks, with lots of boulders.
