Manual night harvest. Vertical press. Fermented in 500-liter French oak casks. Aged on its fine lees with a minimal layer of flor to preserve the varietal aromas, while still providing a hint of yeast.

TASTING NOTES
Appearance:
It has a pale yellow (straw) color, clean and bright, typically with very fine bubbles, although we would prefer a white without significant carbonation.
Nose:
Very expressive and fresh, with aromas of white fruit such as apple, stone fruit, and grapefruit, along with white flowers and mineral nuances that reflect the influence of the albariza soil.
Palm:
Fresh, savory, and full-bodied.
